Chocolate Orange Haystacks

Chocolate Orange Haystacks

Dark chocolate and orange mixed with coconut.  Could there be anything better?

Hard to believe something so good can also be so easy!  An interesting option would be to toast the coconut, but you don’t have to do that; they’re good just as they are.

Chocolate Orange Haystacks
1 1 /2 cups semi-sweet chocolate chips
2 tbs cream
2 tsp orange zest
1 1/2-2 cups shredded coconut 
Place chocolate chips and cream in a microwave-safe bowl.  Microwave on high for 20 seconds; stir. Microwave for an additional 15 seconds.  Stir until smooth.  You may have to repeat the process depending on the wattage of your oven.
Add coconut and orange zest to chocolate mixture.  Stir well.
Drop by rounded teaspoonfulls onto a sheet lined with waxed paper.  Chill until firm–about 30 minutes
Note:  I used a scoop that’s made for drop cookies instead of a teaspoon.  It looks like a small ice cream scoop and is available where kitchen gadgets are sold.  You could also use a melon baller.
