A blender makes these easy! Enjoy often!
Who doesn’t love potato latkes?
I sure do and I really got tired of having to wait until Chanukah and bothering all my Jewish friends to make these for me!! So I started making them the quick way as my mom used to do.
My mother had found a recipe years ago that made this tedious task of grating the potatoes and the onions for potato latkes relatively easy–on time AND knuckles. I really forget where she found it now. Probably in the little booklet that came with the first blender she got, an Oster. That Oster STILL worked after 40+ years btw. I think she left it for the people who bought her house when she moved!
Using a conventional blender, you may have to stir to get the top part of the mixture down to the blades, but if you have a Ninja or Vitamix, having to stir won’t be an issue. Only thing you have to watch here is that you don’t OVERprocess, as the centers of the latkes will be a bit gluey due to the starch in the potato. So just do short pulses and stop when you have a puree.
Serve these with either sour cream, a GREAT applesauce from Melissa over at My Whole Food Life, or plain, as I like them. YUM.

Quick Potato Pancakes (Latkes)
Ingredients
- 3 cups peeled diced potatoes
- 3 tbsp flour
- 1 tsp kosher salt
- 1 small onion
- 1/4 tsp baking powder
- 1 tbsp water optional
- oil for frying
Instructions
- Place all ingredients except water and oil in the bowl of a blender, Ninja or Vitamix.
- Process in short bursts until pureed. You MAY need the 1 tbs of water if this seems too dry.
- Heat oil in a large non-stick frypan or griddle over medium heat.
- Place a scant 1/4 cup of potato mixture in pan, pressing down slightly to form a nice circle about 1/8-inch thick.
- Fry until golden on one side; turn and fry until golden.
- Place on plate lined with a paper towel to absorb excess oil. May be kept warm in a 200 degree F oven until all pancakes are cooked.
- Makes about 10 3-inch latkes.

omg, it was indeed in the Oster blender book! My mom always made potato pancakes from leftover mashed potatoes, until she bought an Oster blender. There was that recipe. She tried it, an we all loved it. She continued making them that way for the rest of her life. They're the best! Just wish mine would come out as good as hers.

Mine don't come out as good as my mom's either 🙁 I'm not sure if it's more of a nostalgia thing or hers really were better!!! And that old "Osterizer" never died either!!! Mom left it for the people who bought her house when she moved.
