Unstocking The Fridge

That time has come again–using up stuff from the fridge.  Not talking spoiled or nasty, just stuff I’ve bought close to a week ago.

There’s zucchini in there, so maybe stuffed and grilled zucchini is in order as a side.  Stuffed with herbed cream cheese and maybe nuts?  Oh yes, and that herb just could be some fresh rosemary or tarragon. Try tarragon with zucchini.  It’s amazing. Or zucchini muffins?  I’ll sleep on this one.

Next there’s avocado.  Now I love avocado and most times just split it in half, remove the seed, sprinkle with Himalayan sea salt and just eat it with a spoon.  A few already went that way.  Now the remaining ones are leaning towards guacamole.  I can use up some of my now-dying cilantro and I have limes and some near-ripe tomatoes.

There’s some baby spinach in there, but that can be thrown in a salad of mixed greens.  Not to be forgotten the red & green bell peppers I have left over from the torta (just enjoyed a hunk of that).

Whatever I make, there’ll be photos & recipes posted here, so check back in a few days.  I’m taking a break from food blogging tomorrow–to hang curtains 🙂
