I would never think to use my slow cooker to roast in, but I’ve been discovering 1000 and 1 uses for this appliance lately.

This roast chicken recipe is so simple, I really can’t believe it. It tastes exactly like the rotisserie chicken you buy at the store.  Only thing is, this is cheaper and kind of better too!

Rotisserie-style chicken from your slow cooker!

There’s a multitude of ways you can season this.  I decided to use my own Creole Seasoning Blend, but Goya’s Adobo would be a great flavor.  So would McCormick’s rotisserie chicken seasoning.  Think up your own!!  Even good old salt, pepper and a dash of garlic powder would be just as good.

And use any chicken parts you like–thighs, breasts, whatever.  But if using breasts, watch it carefully as I’ve noticed breasts tend to get SUPER DRY and stringy with slow cooking.

Slow Cooker Roasted Drumsticks

Ingredients

  • 3 lbs chicken drumsticks
  • 1/2 cup brown sugar
  • 1-2 tbsp Creole Seasoning Blend*

Instructions

  • Spray the inside of a 5-7 quart slow cooker with non-stick spray. An oval slow cooker would be best for this and I'd advise using 2 slow cookers if you have them since chicken *should* be placed in a single layer.
  • Mix together the brown sugar and seasoning blend.
  • Sprinkle over chicken drumsticks and rub in well. Place chicken in (preferably) a single layer in the bottom of the slow cooker.
  • Cover and set to HI. Cook 3-4 hours or until juices run clear.
  • Serves about 4-6

Notes

*Any seasoning you like can be used, i.e., Adobo from Goya, McCormick Blends, etc.

    Would this work with skinless chicken or is it best for skin-on cuts?

    Ordinarily for roasting, I'd say no for any skinless chicken, however, the way the crock pot cooks, it may turn out well. Personally, I wouldn't do it, but if you find a great sale on chicken, it might be worth a try.

    Doesn't matter Patty. Key is high heat and removing any liquid that accumulates. I think I put it skin side up though

    How long should I cook them for if I'm only doing 1.75 pounds of chicken? Would it still be 3-4 hours on high?

    Should be about the same time Barry. Since all crock pots seem to cook a bit differently (my 3 all do), the time is approximate. The important part to getting a roasting-type result is not letting liquid accumulate. Start with a dry crock pot, then skim off any juice as necessary.
