Banana Coconut Smoothie

Pure heaven.  This will give you the energy you need to start your day.

The secret ingredient here is coconut coffee creamer–just a drop adds great flavor.  A real taste of the tropics!

Good pick-me-up or quicky breakfast.  I used frozen mashed bananas, but fresh ones cut up can also be used, however, the partially frozen mashed produces a thick and foamy texture that is oh-so appetizing.

PS–lower-fat alternatives may be used with no sacrifice of flavor.

Banana Coconut Smoothie

  • 1/2 cup milk
  • 1/4 cup half and half
  • 2 tbs Carnation Coconut Creme coffee creamer
  • 1 1/2 whole banana, sliced OR 1/2 cup partially-frozen mashed
  • 1 tbs toasted coconut for topping.

Put all ingredients except the toasted coconut in an immersion (stick) blender bowl–the one that comes with it, or a deep narrow container.

Process with immersion blender on high for 1 minute.  Pour into serving glass and top with toasted coconut.

I had no heat downstairs this morning and thought I could palm one off on the repair guy but he was lactose intolerant LOL. I put it in the fridge for later…and it's no too bad calorie wise!!! I have it as a snack later in the evening.

Hi there! This smoothie looks so yummy and so appealing! I can't wait to try and make it soon. I was also wondering if you would mind if I used a photo of this smoothie recipe on my blog. I do a feature called "Wear What You Eat" and you can see examples here: http://ohmypancake.blogspot.com/search?q=wear+what+you+eat

I will link it back to you, if you allow me to use it. Thanks! I can't wait to spend more time reading your great blog. 🙂

    xo,
