Low Carb “Fried Rice” (BONUS POST)

Posted as a special request from my Facebook Fans!  I’ve been making many variations of this since I was 17.

 

Yes that was a lot of years ago now!!!  Those were the days when I wore like a size 6 or 7 and thought I was FAT–oh yeah–so used to go on crazy diets to “lose weight” OY VAY.  You know, I wish I was that fat NOW.  BTW, that cuckoo diet was Dr Stillman’s Quick Weight Loss Diet–the famous “8 glasses of water a day” diet.  OK, THAT is a healthy habit I always kept up!!
Anyway, this was so good I’ve been making many different versions of it since 1971.  The version above is yet another “jazzed up” version I’m giving the recipe for, but I’ll also include what the original was by marking the ingredients with an asterisk (*)
 
Low Carb Fried Rice

 


  • 2 eggs*
  • 4 oz lean ground beef*
  • 1 tsp soy sauce*
  • 1/2 tsp garlic powder*
  • 1/8 tsp pepper*
  • 1 tsp peanut butter
  • 2 green onions, sliced
  • 4 grape tomatoes, sliced in half
 
Heat a non-stick skillet (don’t use any oil or spray!!) over medium heat.  Break the eggs open in the pan and scramble in pan until almost set.
 
Add the ground beef and brown, breaking up large chunks.  Add soy sauce, garlic powder, pepper, peanut butter, green onions and tomatoes.
 
Stir until well combined and heat about 1 minute.
 
Serve immediately.  Serves 1

    This would be great over cauliflower "rice". It is simple to make, and a great way to get more veggies into your diet

    A a whole I liked it. I added bacon&sauteed cabbage and substituted green onions for white.I was hesitant to add the peanut butter so I put a portion of the dish into a seperate pan & added the peanut butter….I didn't like it but thats just me.try it, it might work for you
