Breakfast for dinner?  You have both right here!

Here’s an idea for “breakfast at dinner.”
Actually a savoury pancake that contains your cheese, beef and onion!
The choice of sauce is up to you, but what I think would be good is cheese, BBQ sauce, ketchup, salsa or even good ol’ brown gravy!

This is another one you can tailor to your taste.  Don’t like onion?  Leave it out and sub something else.  Don’t eat beef? Chicken and turkey will do just fine.  Don’t want meat at all? Leave it out and add more cheese.  In other words, feel free to throw in whatever you like!!  The pancake batter is merely a binder anyway, so load it up!!

Cheeseburger Pancakes

  • 2 cups baking mix (such as Bisquick or Jiffy)
  • 1 1/2 cups milk
  • 1 tbs oil
  • 8 oz ground beef, browned and drained
  • 4 slices crisp bacon, diced
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions, thinly sliced

Heat a large non-stick skillet or griddle as you would to prepare pancakes.

Mix baking mix, the ground beef, bacon, cheddar cheese, green onions and 1 1/4 cups of milk in a large bowl (reserve 1/4 cup of the milk as the batter will get much thicker between the batches).

Drop 1/2 cups full of the batter onto hot griddle, flattening out pancake to about 4-inches in diameter and 1/4-inch thick. Cook until brown on one side; flip and cook the other side until browned.  These may be kept warm in a 200 degree F oven until all pancakes are made.


Serve with desired sauce (see paragraph below).  Makes about 6 pancakes.
Top with additional cheese and green onions.  Sauce toppings that go nicely are BBQ sauce and cheese sauce.  I used BBQ sauce on these, but a nice cheddar cheese sauce made from scratch would be very good or even the quickie Velveeta and salsa sauce that’s done in the microwave.  I think that’s about 1/2 lb of Velveeta and a jar of salsa…but don’t quote me here!!!  Recipe is easily found online.  And brown gravy would be the bomb!!!
