Fruit cobblers were a hot topic of discussion on my crock pot recipe group a week or so ago. Someone mentioned this recipe and I decided to make it as I had all the ingredients.

Easy-to-make dessert

I’ve made similar fruit desserts in the crock pot before, like my Apple Dapple Pudding and always had good results.

What better dessert for February than something with cherries? George Washington and all–although I read somewhere that the “cherry tree story” was totally bogus. However, cherries have stuck to old George so it’s a good dessert for his birthday!

Reminds me of rubies

I happened to have some toasted sliced almonds on hand so I threw those in, but don’t worry if you don’t have any. They aren’t essential.

I couldn’t believe that such humble ingredients, made in a rather common-place appliance could look so beautiful. This is a genuinely stunning dessert. It shines like polished rubies. Seriously, it’s very good to look at.

Whipped cream would make the perfect topping for this, should you want one. It’s scrumptious plain too.

Slow Cooker Cherry Cobbler

Ingredients

  • 1 box 2-layer size yellow cake mix
  • 2 21 oz cherry pie filling
  • 1/2 cup 1 stick butter, melted
  • 1/2 cup toasted sliced almonds
  • 1 tbsp water

Instructions

  • Spray the inside of a 5 qt (or larger) slow cooker crock with non-stick spray.
  • Add the 2 cans of cherry pie filling. Distribute the cake mix over the cherries. Add the toasted almonds.
  • Drizzle melted butter over the cake mix. With a knife, cut through the layers as if you were making a marble cake--do NOT mix the ingredients, simply marble them. Sprinkle the water over the top.
  • Lay 2-3 paper towels on top of slow cooker and secure them with the lid (the lid will hold them in place). This is to prevent the condensation from ending up in the cobbler.
  • Cook on HI 3-5 hours, LOW 5-8 hours or until cake parts are set and not sticky.

    Would adding dry oats to the cake mix, change the way it sets up in the crock pot?

      Probably not–it may make the “cakey” part a bit fuller. It’s a nice addition.
