Marshmallow Peanut Clusters

Easy-to-make peanut marshmallow candy that will please any peanut butter lover.

I’m a real pushover for anything peanut butter.

They used to sell this peanut and marshmallow bar in my local dollar store that was insanely delicious. I think it was called “Nut Bar,” or something like that. It was put out by a relatively unknown candy manufacturer. Well, they stopped selling it and since it wasn’t from a giant corporate candy maker, it’s not in the supermarkets.

Easy as 1-2-3

I’ve missed these candy bars badly. But when tidying up a bit, I found a recently purchased bag of peanut butter chips and a bag of mini marshmallows. That was lurking on a chair because naturally, I meant to put it away when I came back from shopping but promptly forgot, so it became one of the numerous items I “meant to put away” that are on or near my dining room table (I’m not the only one who does this!!!!)

I usually eat the pb chips as candy, but got the bright idea of combining it with the marshmallows and throwing in some peanuts, just like that nut bar thing.

Oh boy, are these GOOOOOOD!!! And they are easy to make too. All you need is your microwave. I had some chocolate drizzle on hand from a dessert I’d just made, so I used it, but you don’t have to–that nut bar I used to buy has no chocolate so if you don’t use it, the clusters will be closer to the original. I just love chocolate/peanut combos and using up what I have on hand.

Marshmallow Peanut Clusters

  • 1 bag (10 oz) peanut butter flavored morsels
  • 2 tsp shortening -OR- 2-3 tbs heavy cream
  • 1 1/2 cups mini marshmallows
  • 1 cup cocktail peanuts
  • chocolate glaze for drizzle: (optional)
  • 1/2 cup chocolate chips
  • 2 tsp heavy cream

Line a large baking sheet with waxed paper or parchment paper.

Place peanut butter morsels in a large microwave-safe bowl. Add the shortening (or cream, but start with 2 tbs, you can always add the additional if needed).

Microwave at 50% power for 45 seconds. Stir until smooth. If there are too many lumps, microwave for an additional 15 seconds at 50% power. If mixture seems too stiff, add the additional cream (if using cream).

Add the mini marshmallows and peanuts. Stir well to coat with the melted peanut butter chips.

Drop by heaping tablespoons onto prepared baking sheet. Let candy set. Drizzle with chocolate glaze if desired.

Chocolate Glaze: Place chocolate chips and cream in a small microwave-safe bowl. Microwave at 50% power for 30 seconds; remove and stir until smooth. Add additional cream if you want a thinner glaze.

Yields about 1 dozen clusters.
