Hamburger Stroganoff Casserole

Quick, easy and inexpensive.  Tastes like the real deal too.

Another golden oldie from the “we have to pinch pennies” days.

This, surprisingly enough, tastes pretty authentic!  Unlike the real thing, this doesn’t have any noodles involved at all.  The gravy is tasty and gets a little help from the condensed soup and some sour cream.

You can make your own herbed biscuits (recipe is there). You can use baking mix, like Bisquick and just add the spices to their recipe printed on the box.  Heck, even use some “wampum” biscuits if you have them.  However, they won’t taste nice and “herby” but you can top with some poppy seed if you want.



Hamburger Stroganoff Casserole

  • 1 1/2 lbs very lean ground beef
  • 2 cups sliced fresh mushrooms
  • 1 small onion, chopped
  • 2 cans (10.5 oz each) cream of mushroom soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/4 tsp pepper
  • 1 tsp salt
  • Biscuit Topping*:
  • 1 1/2 cups flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp paprika
  • 1/2 tsp celery seed
  • 1/4 cup shortening
  • 3/4 cup milk
  • Buttered Bread Crumbs:
  • 1 tbs butter, melted
  • 1/2 cup plain breadcrumbs
  • Optional:
  • 1 tbs poppy seed

*Bisquick or baking mix biscuits may be substituted–just add the condiments and spices to the specified amount (on the package) for the biscuit recipe.  Refrigerated biscuits may be used as well, minus the spices, of course, but top with poppy seed.

Preheat oven to 425 degrees F.  Spray or lightly grease a 3-quart casserole dish.

Brown ground beef, onion and mushrooms in a large deep skillet.  Drain off any fat. Reduce heat.

Add the salt, pepper and the 2 cans of soup.  Simmer for 10 minutes.  Meanwhile, prepare biscuits by mixing all the dry ingredients, cutting in the shortening till it resembles small peas, then stirring in the milk.

Remove from heat and stir in the sour cream.  Turn into prepared casserole dish. Top with biscuits.

Mix the melted butter and bread crumbs.  Distribute over tops of biscuits.  If you are using poppy seed (optional), sprinkle over top of casserole.

Bake at 425 degrees F for 15-25 minutes or until biscuit topping is golden brown and biscuits are cooked through.

Serves 6-8
