Creamy Lime Squares

Here is the equipment you will need–

Spray or grease a 9×9 baking pan. Preheat oven to 350 degrees.
Here are the ingredients (eggs and food coloring not shown)

Here we grate the lime zest with a Microplane.  The correct way to use the Microplane is to have the channel facing up.  That way, what you grate is held in the channel.

Mix one cup of the flour with the confectioner’s sugar and salt.  Cut in butter.  Mixture should look like this.

Place crust mixture in pan and distribute evenly.  Press firmly into pan. Bake at 350 for 20-25 minutes or until edges are light golden brown.

While crust is baking, prepare filling.  Mix sugar and remaining 1/4 cup of flour with electric mixer.

Add eggs, one at a time, beating well after each addition.

Add lime juice, zest and food coloring, if desired.  Beat well until frothy. I found 4 drops of green was a good color.

When crust is light golden around edges, pour filling over hot crust and return to oven for about 20 minutes or until filling is set.  Filling won’t wiggle when it’s set.

Cool completely.  When cool, cut with wet knife and dust with additional confectioner’s sugar if desired.

  • 1 1/4 cup flour
  • 1/4 cup confectioner’s sugar
  • 1/2 cup (1 stick or 4 oz) butter
  • 1/4 tsp salt
  • 2/3 cup freshly squeezed lime juice
  • 1 1/4 cup sugar
  • 4 eggs
  • 2 tsp lime zest
  • green food coloring (optional)
