Slow Cooker Maple Kissed Roast Chicken |
Let your slow cooker do all the work making this maple-flavored roast chicken and carrots!
Anyone who reads this blog knows that a) I’m a chicken-head and love the stuff and b) I’m a maple syrup/flavor ADDICT. Those are not necessarily in that order.
I had the pleasure to meet the people at Crown Maple through one of my Twitter tweets of a maple syrup-based recipe. They were kind enough to send me a sampler pack of their light/medium/dark amber syrups–a gift that is always appreciated here. They are a local farm and their products are organic–another thing I’m pleased about because I’m very “into” supporting local producers!

Slow Cooker Maple Kissed Roast Chicken
Ingredients
- 6 large skin-on chicken thighs or 1 small whole chicken cut up
- 1/2 cup alternate rub
- 1 bag 1 lb peeled baby carrots
- salt & pepper to taste
- 1/2 cup maple syrup
- 2 tsp dijon mustard
Instructions
- Place all ingredients, except the maple syrup & mustard in a 4-6 quart slow cooker. Sprinkle with the alternate rub.
- Turn slow cooker to HI and cook for 4-6 hours (times vary because all slow cookers do! Mine was done in 4.5 hours).
- Drain any liquid that accumulated in the crock.
- Mix maple syrup & dijon mustard in a small bowl. Pour over chicken/carrots, coating evenly. Cook on HI for another 15-30 minutes.

I love maple syrup with savoury!!! I have a short rib recipe that's out of this world and a pork and potatoes one too. It just adds so much flavor!
