Rice Salad

This versatile salad is made from ingredients you have on hand.

Yesterday, I made a couple of cups of rice to use as a prop for my rib photo (on this blog, Plum Good Asian Baby Back Ribs) for this blog.  I wanted to use this up.  I took the rice, added some shredded romaine lettuce, chopped cucumber, chopped onion and chopped tomato.

I gave this an Asian flare by using a bottled gourmet Asian Sesame dressing.  This would be equally as good with Italian, ranch or blue cheese dressing.  Get creative with dressings as it should all be good.

Feel free to add any veggies or left-over meat you have on hand as this has potential for being a main course.
