- 2-3 lbs fresh chicken wings cut in flats and drums
- 1 tsp garlic powder
- 1/2 tsp cornstarch
- 1/2 cup mayonnaise
- Sauce:
- 1/2 tsp of salt
- 1 tsp dry Italian salad dressing mix
- 1/4 tsp of ground black pepper
- 1/4 cup grated Parmesan or Romano cheese plus more for topping
- 2 tbs finely minced garlic
- 2 tbs fresh chopped parsley
- 1/2 cup unsalted butter melted
Preheat the oven or air fryer to 400F/200C. Pat the wings dry. Season the wings with garlic powder, cornstarch and mayonnaise and coat very well.
If using the oven, line a large baking sheet with parchment. Place the wings on the top rack and bake for 35-45 minutes until golden brown and crispy.
If using an air fryer, the cooking time may vary and may require less time, approximately 25-30 minutes.
As the wings cook, prepare the sauce. In a large bowl, mix the salt, salad dressing mix, parmesan cheese, garlic and parsley. Whisk in the warm melted butter until well combined. Whisk again right before adding the wings.
Add the wings to the mixture straight from the oven while they are still hot. Toss until they are all well coated. Place the wings back in the oven or air fryer and bake again for an additional 8-10 minutes. This will allow the chicken to absorb all the flavors and make them extra crispy.
Garnish with a light dusting of parmesan cheese and a little parsley if desired.
