Quick Potato Pancakes (Latkes)

A blender makes the batter for these quick potato pancakes!  Enjoy latkes often!

Ingredients

  • 3 cups peeled diced potatoes
  • 3 tbsp flour
  • 1 tsp kosher salt
  • 1 small onion
  • 1/4 tsp baking powder
  • 1 tbsp water optional
  • oil for frying

Instructions

  • Place all ingredients except water and oil in the bowl of a blender, Ninja or Vitamix.
  • Process in short bursts until pureed. You MAY need the 1 tbs of water if this seems too dry.
  • Heat oil in a large non-stick frypan or griddle over medium heat.
  • Place a scant 1/4 cup of potato mixture in pan, pressing down slightly to form a nice circle about 1/8-inch thick.
  • Fry until golden on one side; turn and fry until golden.
  • Place on plate lined with a paper towel to absorb excess oil. May be kept warm in a 200 degree F oven until all pancakes are cooked.
  • Makes about 10 3-inch latkes.
