This delicious taco meatloaf is perfect for a bit of Mexican flair in your comfort food.
Servings: 4 -6
- 1 lb lean ground beef
- 1.75 cup cracker crumbs Saltine or Ritz
- 1/4 cup milk
- 2 eggs
- 3 tbsp taco seasoning (see NOTES)
- 1 cup salsa or pico de gallo
Preheat oven to 350 degrees F. Line a baking sheet with parchment or aluminum foil.
Mix all ingredients, except for the salsa, in a large bowl.
Shape into a loaf on prepared sheet.
Bake at 350 degrees F for 50-60 minutes, or until center of loaf is 160 degrees F per a meat thermometer.
Top with salsa or pico de gallo (if desired)
