Garlic Parmesan Potatoes

These garlic Parmesan potatoes are so good, they can double as a meal! Crispy on the outside and tender on the inside. They can be made in an airfryer or the oven.

Ingredients

  • 1 1/2 lb small red potatoes often called “gourmet potatoes”--see NOTES
  • 1/3 cup unsalted butter melted
  • 2 cloves garlic finely minced
  • 1/3 cup plain breadcrumbs
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1/3 cup grated Parmesan cheese or Romano cheese
  • 1/2 tsp oregano
  • 1/2 tsp paprika

Instructions

  • Preheat oven to 375 degrees F. Lightly spray a large baking sheet with non-stick spray.
  • Scrub the potatoes well; dry them of any excess water. Cut each potato in half and place in a large bowl.
  • Mix the garlic and melted butter and pour over the potatoes.
  • Combine the remaining ingredients and add to the potato mixture. Toss well to coat.
  • Bake for 50-60 minutes or until potatoes are golden brown and done.

Notes

You can use larger red potatoes--just cut them in about 1-1 1/2-inch chunks.
