Mexican Three-Bean Salad

- 15 oz canned cannellini beans drained and rinsed
- 15 oz canned kidney beans drained and rinsed
- 15 oz canned black beans drained and rinsed
- 1 cup frozen corn kernels defrosted
- 3/4 cup red onion chopped
- 1/2 cup poblano peppers finely diced
- 1/2 cup red bell pepper finely diced
- 2 tbs chopped fresh parsley
- 1 tbs chopped fresh cilantro
Dressing:
- 1/4 cup olive oil
- 3 tbs white wine vinegar
- 1 tbs lemon juice
- 1/8 tsp cumin
- 1/4 tsp chipotle chili powder
- 1 clove garlic minced
- 1 tbs sugar
- 1 Pinch salt
- 1 Pinch pepper
Place the drained beans, corn, onion, peppers, parsley and cilantro in a large bowl.
Mix all dressing ingredients in a small bowl and whisk it well; pour over bean mixture and toss to coat.
Chill until ready to serve.
