  • 2 lb baby Yukon Gold potatoes halved, quartered if large
  • 1 cup plus 2 tablespoons distilled white vinegar
  • 1 tbs kosher salt plus more
  • Freshly ground black pepper
  • 2 tbs chopped fresh chives
  • Coarse sea salt
  • 2 tbs olive oil


  • Combine potatoes, 1 cup vinegar, and 1 tablespoon kosher salt in a medium saucepan; add water to cover by 1". Bring to a boil, reduce heat, and simmer until potatoes are tender, 20–25 minutes; drain and pat dry.
  • Place potatoes in a large bowl. Add the olive oil and toss until well coated (you may add more olive oil if you wish).
  • Put the potatoes in the air fryer basket and cook at 400F/200C for 10-15 minutes or until the potatoes are tender and beginning to crisp around the edges.
  • Sprinkle with the remaining 2 tablespoons of vinegar, chives and coarse sea salt.
