Hawaiian Pulled Pork

Ingredients

  • 4-5 lb pork butt
  • 2 cups water
  • 1/4 cup soy sauce
  • 1 clove garlic crushed

Sauce:

  • 12 oz pineapple juice
  • 1 tbs soy sauce
  • 2 large cloves garlic finely minced
  • 2 tbs ketchup
  • 1 tbs grated ginger
  • 1 tbs hoisin sauce
  • 2 tbs honey
  • 2 tbs brown sugar

Instructions

  • Place roast in Instant Pot. Add the water, soy sauce and garlic. Set pot for high pressure and cook for 90 minutes. Let pressure drop naturally. Pork should easily shred. If not, then cook an additional 10 minutes at high pressure. Discard liquid in the pot.
  • Shred pork and set aside.
  • Add the sauce ingredients to the Instant Pot and set on "Saute" at medium heat. Cook until
  • the sauce becomes slightly syrupy--about 5 minutes.
  • Add the shredded pork back to the pot to heat through.
