Ingredients

  • 4 russet potatoes medium sized
  • 2 tbs olive oil
  • 3 tbs fresh chives
  • 2 tsp garlic powder
  • 1 tsp sea salt

Instructions

  • Fill a large bowl with ice water. Cut potatoes into shoe string size pieces. Place potatoes in ice water and let them sit for 10-15 minutes.
  • Drain potatoes and dry thoroughly on paper towels.
  • Place dried potatoes in another large bowl and add remaining ingredients. Toss well so they’re all coated with the oil.
  • Place potatoes in a single layer in the basket of an air fryer. Set fryer to 400F/200C and fry for 20-25 minutes, shaking basket a few times during cooking.
  • OVEN METHOD: Preheat oven to 450F/225C. Spread potatoes on a foil lined large baking sheet and bake for 20-25 minutes, turning halfway through the cooking.

Notes

Dried chives may be substituted, but use only 2 tablespoon. Air fryers vary in power so your cooking time could be slightly longer. My air fryer is 1800W and the time is based on that.
