Quick Potato Pancakes (Latkes)

- 3 cups peeled diced potatoes
- 3 tbsp flour
- 1 tsp kosher salt
- 1 small onion
- 1/4 tsp baking powder
- 1 tbsp water optional
- oil for frying
Place all ingredients except water and oil in the bowl of a blender, Ninja or Vitamix.
Process in short bursts until pureed. You MAY need the 1 tbs of water if this seems too dry.
Heat oil in a large non-stick frypan or griddle over medium heat.
Place a scant 1/4 cup of potato mixture in pan, pressing down slightly to form a nice circle about 1/8-inch thick.
Fry until golden on one side; turn and fry until golden.
Place on plate lined with a paper towel to absorb excess oil. May be kept warm in a 200 degree F oven until all pancakes are cooked.
Makes about 10 3-inch latkes.
