Slow Cooker Fruity BBQ Chicken

Make this finger-lickin’ good BBQ chicken recipe right in your slow cooker.  Yep, you can even use the crock pot to barbeque!

Ingredients

  • 3 lbs assorted chicken drumsticks and thighs
  • 1 tbsp salt
  • 1 tsp pepper
  • 1 tsp garlic powder

FRUITY BBQ SAUCE

  • 1 cup high-quality BBQ sauce like Sweet Baby Ray's
  • 1/2 cup apricot or peach preserves*
  • 2 tsp dijon mustard

Instructions

  • *Concord grape jelly would probably be just as good.
  • Mix salt, pepper and garlic powder. Sprinkle on chicken and rub in well. NOTE: skin may be removed from chicken if desired. Place chicken in the bottom of a 6 or 7 quart slow cooker, try to get chicken in a single layer if possible. An oval slow cooker would be best here.
  • Cover and set cooker to HI and cook for 3 hours or on LOW 6 hrs (I recommend cooking on HI).
  • In a small bowl, mix all the Fruity BBQ Sauce ingredients. Set aside.
  • Remove chicken from slow cooker and place on a plate. Drain juices from the slow cooker crock and wipe the crock dry with a paper towel. Place chicken back in the slow cooker. Pour HALF the sauce over the chicken. Cover and continue cooking on HI for an additional 1 hour or LOW and additional 2 hours.
  • Remove chicken from slow cooker and brush with some more sauce (I reserved about 1/4-1/2 cup for dipping, but you can use it ALL if you wish). I popped the chicken under the broiler for a minute or 2 to crisp it a bit...but it's not necessary.
  • Serve with oven-baked Steak Fries
