Slow Cooker Maple Kissed Roast Chicken
Let your slow cooker do all the work making this maple-flavored roast chicken and carrots!
- 6 large skin-on chicken thighs or 1 small whole chicken cut up
- 1/2 cup alternate rub
- 1 bag 1 lb peeled baby carrots
- salt & pepper to taste
- 1/2 cup maple syrup
- 2 tsp dijon mustard
Place all ingredients, except the maple syrup & mustard in a 4-6 quart slow cooker. Sprinkle with the alternate rub.
Turn slow cooker to HI and cook for 4-6 hours (times vary because all slow cookers do! Mine was done in 4.5 hours).
Drain any liquid that accumulated in the crock.
Mix maple syrup & dijon mustard in a small bowl. Pour over chicken/carrots, coating evenly. Cook on HI for another 15-30 minutes.
