Slow Cooker Peach Cobbler

- 2 lbs peaches firm but ripe
- 1 tbsp lemon juice
- 3/4 cup dark brown sugar
- 3/4 cup rolled oats old-fashioned preferred
- 3/4 cup flour
- 1/4 cup 1/2 stick unsalted butter, cut in chunks
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- Pinch of kosher salt
Lightly spray the crock of a 5-6 quart slow cooker with non-stick spray.
Cut peaches in half and remove pit. Cut into 1/2-inch slices and place in a bowl. Sprinkle with lemon juice, toss, then set aside.
In a large bowl, combine the brown sugar, salt, oats, flour, baking powder and spices. Mix well.
Cut butter into flour mixture with a pastry blender or 2 knives until it resembles small peas.
Add peaches to flour mixture, mix well and turn into prepared crock pot.
Place a layer of paper towels under the lid to catch condensation.
Cook on low for about 3 hours, or until peaches are soft and oat mixture is brown.
