Creme de Menthe Cake Mix Cookies

These creme de menthe cake mix cookies contain no liqueur but have the same great taste! Easy to make!

Ingredients

  • 1 box 2-layer size, 15+ oz white cake mix --I used Duncan Hines
  • 2 eggs
  • 1/2 cup oil
  • 1-2 tsp green food coloring optional
  • 1/2 cup mint morsels see NOTES
  • 1/2 cup chocolate morsels

Instructions

  • Preheat oven to 375 degrees F.
  • Blend cake mix, eggs, oil and food coloring (if using) in a large bowl.
  • Fold in the mint & chocolate morsels.
  • Shape into balls about the size of a walnut and place 2-inches apart on an ungreased cookie sheet.
  • Bake for 8-10 minutes.
  • Let the cookies cool for 2 minutes on the baking sheet. Remove to a rack to cool completely.

Notes

If you cannot find mint morsels--you can use 1 cup Andes Candies baking bits and omit the chocolate chips, or you can omit the mint morsels, use 1 tsp peppermint extract in the batter and up the amount of chocolate chips to 1 cup.
