Taco Meatloaf

This delicious taco meatloaf is perfect for a bit of Mexican flair in your comfort food.

  • 1 lb lean ground beef
  • 1.75 cup cracker crumbs Saltine or Ritz
  • 1/4 cup milk
  • 2 eggs
  • 3 tbsp taco seasoning (see NOTES)
  • 1 cup salsa or pico de gallo


  • Preheat oven to 350 degrees F. Line a baking sheet with parchment or aluminum foil.
  • Mix all ingredients, except for the salsa, in a large bowl.
  • Shape into a loaf on prepared sheet.
  • Bake at 350 degrees F for 50-60 minutes, or until center of loaf is 160 degrees F per a meat thermometer.
  • Top with salsa or pico de gallo (if desired)


You can use 3 tbs of bulk taco seasoning or 1 recipe of my taco seasoning recipe
