No-Bake Strawberry Mousse Pie

Ingredients

  • 3 oz strawberry gelatin small box (see NOTES)
  • 1/2 cup boiling water
  • 1 cup cottage cheese see NOTES
  • 1/4 cup sour cream see NOTES
  • 1 cup whipped topping

For Graham Cracker Crust

  • 1 1/2 cups graham cracker crumbs
  • 6 tbsp melted unsalted butter
  • 2 tbsp granulated sugar optional

Instructions

Graham Cracker Crust

  • Mix all ingredients in a small bowl until crumbs are all coated with butter.
  • Press mixture into a 9-inch pie pan.

Strawberry Mousse

  • Dissolve gelatin in boiling water in a large bowl; cool to room temperature.
  • Puree cottage cheese and sour cream in a food processor or Ninja; stir into cooled gelatin.
  • Fold in the whipped topping then pour the mixture into the prepared crust.
  • Refrigerate until firm, about 3 hours.

Notes

SUBSTITUTIONS
You may use sugar-free gelatin, low- or no-fat cottage cheese, and lite sour cream.
You may also use a store-bought 9-inch graham cracker crust.
