- 3 oz strawberry gelatin small box (see NOTES)
- 1/2 cup boiling water
- 1 cup cottage cheese see NOTES
- 1/4 cup sour cream see NOTES
- 1 cup whipped topping
For Graham Cracker Crust
- 1 1/2 cups graham cracker crumbs
- 6 tbsp melted unsalted butter
- 2 tbsp granulated sugar optional
Strawberry Mousse
Dissolve gelatin in boiling water in a large bowl; cool to room temperature.
Puree cottage cheese and sour cream in a food processor or Ninja; stir into cooled gelatin.
Fold in the whipped topping then pour the mixture into the prepared crust.
Refrigerate until firm, about 3 hours.
SUBSTITUTIONS
You may use sugar-free gelatin, low- or no-fat cottage cheese, and lite sour cream.
You may also use a store-bought 9-inch graham cracker crust.
