<p>You don&#8217;t need buttermilk for these blueberry waffles! Surprise! &nbsp;They use sour cream and greek yogurt! Sunday breakfast at it&#8217;s best.</p>
<p>
<a name='more'></a>Stumped for Sunday breakfast? &nbsp;Want waffles but you have no milk, let alone buttermilk? &nbsp;Here&#8217;s your answer! &nbsp;</p>
<p>These waffles are made from scratch&#8230;no baking mix here! The great part is they don&#8217;t require milk. &nbsp;If you have Greek yogurt, that&#8217;s really all you need. &nbsp;You can use sour cream, but since Greek yogurt is a sour cream substitute, you can use all yogurt.</p>
<p></p>

<p>I actually like them with the sour cream because the texture is slightly better; it&#8217;s smoother and silkier. &nbsp;I use the regular variety of each, not the low-fat varieties, but I&#8217;m sure you can substitute those with no ill effects, but watch fat-free stuff&#8211;they will probably be way too sweet since you need some fat to temper the pure sweetness of the ingredients.</p>
<p>These taste great with good ole maple syrup, but they&#8217;d probably taste even better with a nice flavorful fruit syrup.</p>

<p>Even try these for dessert&#8211;topped with ice cream and fudge syrup. &nbsp;Waffles aren&#8217;t only for breakfast!</p>

<ul class="ingredients">
<li><i style="font-family: Arial, Helvetica, sans-serif;">1/2 cup sour cream</i></li>
<li><i style="font-family: Arial, Helvetica, sans-serif;">1/2 cup plain greek yogurt</i></li>
<li><i style="font-family: Arial, Helvetica, sans-serif;">1 cup water</i></li>
<li><i style="font-family: Arial, Helvetica, sans-serif;">2 tbs sugar</i></li>
<li><i style="font-family: Arial, Helvetica, sans-serif;">2 eggs</i></li>
<li><i style="font-family: Arial, Helvetica, sans-serif;">1 tsp vanilla</i></li>
<li><i style="font-family: Arial, Helvetica, sans-serif;">1/4 tsp white vinegar</i></li>
<li><i style="font-family: Arial, Helvetica, sans-serif;">2 cups flour</i></li>
<li><i style="font-family: Arial, Helvetica, sans-serif;">2 tsp baking powder</i></li>
<li><i style="font-family: Arial, Helvetica, sans-serif;">1 tsp baking soda</i></li>
<li><i style="font-family: Arial, Helvetica, sans-serif;">1/2 tsp salt</i></li>
<li><i style="font-family: Arial, Helvetica, sans-serif;">1 cup fresh or frozen blueberries (if using frozen, don&#8217;t thaw)</i></li>
</ul>
<p>
<i style="font-family: Arial, Helvetica, sans-serif;"><br /></i><br />
<i style="font-family: Arial, Helvetica, sans-serif;">In a large bowl, whisk sour cream, yogurt, water, sugar, eggs, vanilla and vinegar.</i><br />
<i style="font-family: Arial, Helvetica, sans-serif;"><br /></i><br />
<i style="font-family: Arial, Helvetica, sans-serif;">In another bowl, mix the flour, baking powder, baking soda and salt.</i><br />
<i style="font-family: Arial, Helvetica, sans-serif;"><br /></i><br />
<i style="font-family: Arial, Helvetica, sans-serif;">Add the flour mixture to the sour cream mixture and whisk until smooth.</i><br />
<i style="font-family: Arial, Helvetica, sans-serif;"><br /></i><br />
<i style="font-family: Arial, Helvetica, sans-serif;">Preheat waffle maker. &nbsp;Add batter as per manufacturer&#8217;s instructions. &nbsp;Top the batter with 1/4 cup (approximate) of blueberries. &nbsp;Close top of waffle maker and proceed as per waffle maker&#8217;s instructions. &nbsp;Generally, when the steam stops is when the waffle is done, but best to follow your waffle iron&#8217;s instructions.</i><br />
<i style="font-family: Arial, Helvetica, sans-serif;"><br /></i><br />
<i style="font-family: Arial, Helvetica, sans-serif;">Dust with powdered sugar if desired. &nbsp;Serve with butter and syrup of choice.</i><br />
<i style="font-family: Arial, Helvetica, sans-serif;"><br /></i><br />
<i style="font-family: Arial, Helvetica, sans-serif;">Makes about 4 large waffles (that is what I got and I use one of those flip-style Belgian waffle makers.</i><br />
