This is for everyone on my Facebook fan page who asked how I flavored my pork roast and the pan-roasted potatoes.</p>
<p><a name='more'></a>You can always make herb roasted potatoes even without a roast. &nbsp;The drippings do give the potatoes some extra flavor, but you can roast them by themselves. &nbsp;Just toss with a bit of olive oil, use the rub the same way and roast about 1 1/2 hours for nice crispy potatoes.</p>

<b><i><u>Roast Pork with Herbed Roast Potatoes</u></i></b></p>

<i>1 pork rib/loin end roast (4-5 lb)</i><br />
<i>2 lbs medium potatoes, peeled and cut in half</i><br />
<i><u>Rub</u>:</i><br />
<i>1 tbs salt</i><br />
<i>1 tbs black pepper</i><br />
<i>1 tbs garlic powder</i><br />
<i>1 tbs onion powder</i><br />
<i>1 tsp crushed thyme (the dehydrated kind)</i><br />
<i>1/2 tsp sugar</i><br />
<i><br /></i><br />
<i>Mix all rub ingredients.</i><br />
<i><br /></i><br />
<i>Rub about 1 tbs of the rub on the pork roast. &nbsp;Place in a roasting pan and roast at 350 degrees F for about 1 1/2 hours.</i><br />
<i><br /></i><br />
<i>Remove roast from the oven (enough drippings should have accumulated at the bottom of the roasting pan in the stated time, if not, return to oven for 30 more minutes). &nbsp;Place potatoes in pan and coat with the drippings. &nbsp;Sprinkle with desired amount of rub.</i><br />
<i><br /></i><br />
<i>Return roast to oven. About 30 minutes before roast is done, turn potatoes and sprinkle with additional rub.</i><br />
<i><br /></i><br />
<i>Garnish potatoes with chopped fresh parsley before serving.</i><br />
<i><br /></i><br />
<i>Meal should serve 4.</i><br />
