<h2>No-Knead Peasant Bread: No Skills Required</h2>
<p>Ever see those beautiful round peasant loaves and think making them is out of your league?</p>
<p>Think again! This wonderfully simple bread requires no kneading and no shaping skills. If you can mix something with a spoon, then that&#8217;s the only skill you will need to make this gorgeous loaf of bread.</p>
<p>The only investment you make with this bread is time. It requires at least 12 hours to sit and ferment and yes, the hardest part of the entire thing is the wait.</p>

<h2>Cast Iron Is Necessary</h2>
<p>A cast iron dutch oven with a lid is necessary to make this lovely bread.</p>
<p>The reason is that cast iron holds heat very well and since you must pre-heat the pan itself, the dutch oven becomes an oven within an oven.</p>
<p>Size matters here too. The best size is a 4-quart/4 L size pan. With this size pan, you get a nice high rise because it won&#8217;t spread out much. You can also use a 5Q/5L or 6Q/6L dutch oven as well. Just keep in mind that your loaf will be wider and flatter. Use the size you have if it&#8217;s in that range. I would imagine that a high-quality ceramic casserole with a lid would work as well, but since I haven&#8217;t tried it in one of those, I cannot speak for the results. Theoretically, it should work just as well.</p>
<p>I used my <a href="https://amzn.to/3iFgLhK" target="_blank" rel="noopener nofollow external" data-wpel-link="external">Staub 4Q dutch oven</a>.</p>

<h2>Easy On The Budget</h2>
<p>Just like my <a href="https://bakeatmidnite.com/amish-white-bread/" data-wpel-link="internal" target="_self" rel="follow">Amish White Bread</a>, this boule is very easy on your budget.</p>
<p>It contains no hoity-toity ingredients that are hard to get. It&#8217;s simply flour, water, yeast and salt. And those are things most, if not all, of us have on hand.</p>
<p>And yes, you can use all-purpose flour if you don&#8217;t have bread flour. The texture will be less dense if you do, but that&#8217;s of little consequence.</p>

<p>I use bread flour for one&#8211;but you don&#8217;t have to.  All purpose will do just fine.  You can also toss in some chopped walnuts or pecans.  In fact, the original recipe calls for them, but as much as I like nuts, somehow, the thought doesn&#8217;t turn me on with this particular bread so I leave (and always have) them out.</p>

<p>This is also a good toasting bread&#8211;if it lasts that long!  I love it just out of the oven with nothing&#8230;not even a pat of butter&#8230;on it.</p>
<p>I&#8217;ve given directions for the conventional and bread machine way.  Either way you decide, it tastes the same!  Even if the bread machine doesn&#8217;t deliver the desired shape&#8211;this is the now-infamous &#8220;Herman Munster&#8217;s shoe bread.&#8221;  That name was coined by my friend Lori W. when I made a loaf for her and her family.  Any other time I used the bread machine, it came out perfectly; except THIS time when I was making it for somebody (can you say &#8220;Murphy&#8217;s Law?&#8221;).  It was sort of low on one end and high on the other and she said it looked like Herman Munster&#8217;s shoe.  It did!! I only wish we&#8217;d gotten pictures of it and we still laugh about it years later!</p>

Sprinkle yeast on top to soften and proof (proofing tests to see if the yeast is alive.  In about 5 minutes or so, you will start to get bubbles–this means the yeast is good.  If after 10 minutes, you see no bubbles or foam, the yeast will NOT rise the bread.  Discard the water/sugar mixture and buy new yeast).  If yeast “proofs,” then proceed—</div></li><li id="wprm-recipe-21381-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add the oil, salt, dry milk, raisins, cinnamon and 2 cups of the flour to the bowl.  Fit mixer with dough hook and using speed recommended by manufacturer (with KA that’s #2), mix the ingredients in the bowl.</div></li><li id="wprm-recipe-21381-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add the remaining flour, 1 cup at a time, until a soft, but NOT sticky dough develops.  If dough is a bit too sticky, add flour a tablespoon at a time.  Flour is almost always a range–you only use as much as needed to get a soft, yet workable dough that doesn’t stick to your hands.</div></li><li id="wprm-recipe-21381-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Knead (by machine) about 5 minutes or turn out on floured surface and knead by hand about 8 minutes.</div></li><li id="wprm-recipe-21381-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place about 1 tsp of oil in the bottom of a large bowl and place the kneaded dough in the bowl, coating the bottom of the dough with the oil.  Turn dough oil side up and cover with greased plastic wrap.  Let rise in a warm, draft-free place until double in bulk–about 1 hour.</div></li><li id="wprm-recipe-21381-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Punch down dough after the rise (yep, just give it a good clop in the middle of the dough to deflate it).  Turn out on a floured surface and shape into a loaf–all this means is rolling or patting the dough out into a rectangle about 6×10 inches and rolling up, jelly-roll style from the narrower end.  Seal the seams and place in a greased 9x5x3 loaf pan. Cover with greased plastic wrap and place in a warm draft-free place to rise until double in bulk; about 45 minutes.</div></li><li id="wprm-recipe-21381-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Heat oven to 350 degrees F. <p>That source is the 1956 edition of Betty Crocker&#8217;s cookbook. The heck you say! But I tell the truth.  I&#8217;ve tried many and this is the best.  The curious thing is, this version of the recipe is <b><i>ONLY</i></b> in the 1956 edition.  I have the 1951 edition and it&#8217;s different and NOT so good.  Later editions had different recipes and again, not as good.</p>
<p>They key here is the 2 rising periods in addition to the rise after it&#8217;s shaped.  This gives the dough an incredible taste AND texture.  It&#8217;s easy to make, but there&#8217;s time involved because of the additional rise.  Don&#8217;t try to save time and eliminate that second rise&#8230;the results will be poor and the additional time invested pays off in silver dollars.  Trust me, I tried and it doesn&#8217;t come out as good.</p>

<p>The crispiness of the crust comes from brushing the top twice with cold water. Then half way through the baking time, brushing it with an egg white wash. Commercial ovens have a steam cycle which accomplishes this (much better actually) and you can sort of achieve a similar effect by tossing a couple of ice cubes on the floor of your oven when you put the bread in to bake.</p>

Start with the minimum amount of flour. Dough should be silky but not sticky and have a firmish texture.</div></li><li id="wprm-recipe-17534-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Knead either by machine or hand. With machine, attach dough hook and knead for 5-8 minutes. Knead by hand 8-10 minutes.</div></li><li id="wprm-recipe-17534-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">You may use a bread machine for the mixing and first rise. Follow manufacturer's directions for adding ingredients and use the "DOUGH" cycle.</div></li><li id="wprm-recipe-17534-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place a little oil in a large bowl. Place dough in bowl, coating bottom of dough with the oil. Turn dough oil side up and cover and let rise in a warm, draft-free place until double in bulk, about 1 hour.</div></li><li id="wprm-recipe-17534-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">(I use the oven-rise method. Before you put the bowl of dough in, turn on the oven. Let it run for about 30 seconds once you hear the heat come up, then turn the oven off. Put the bowl of dough in and it rises in the perfect environment)</div></li><li id="wprm-recipe-17534-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">When dough is double in bulk, punch down, cover and let rise again until double in bulk; about 30 minutes. If you are using a bread machine, if there is a cycle for a 2nd rise, use that. If not, remove and follow directions from placing in the oiled bowl.</div></li><li id="wprm-recipe-17534-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">When the 2nd rise is up, punch down dough and roll out in a 10 x 15 -inch rectangle. Roll up tightly from long side; seal seam. Roll the log of dough by placing hands at the 2 ends thus ending up with skinnier ends and a fatter middle.</div></li><li id="wprm-recipe-17534-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place parchment paper on a large baking sheet. Dust with the cornmeal or semolina flour. *If not using parchment, grease baking sheet lightly and sprinkle with the cornmeal/semolina flour.</div></li><li id="wprm-recipe-17534-step-0-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Place shaped dough on prepared baking sheet. With sharp knife or razor blade, cut a 1/4-inch deep slit down center or make 3 short diagonal slashes across top of dough. Brush top with cold water.</div></li><li id="wprm-recipe-17534-step-0-9" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Let rise UNCOVERED in a warm draft-free place (I use the unlit oven) for 1 1/2 hrs.</div></li><li id="wprm-recipe-17534-step-0-10" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Preheat oven to 375 degrees F. Brush top of loaf again with cold water.</div></li><li id="wprm-recipe-17534-step-0-11" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Mix the water with the egg white and set aside.</div></li><li id="wprm-recipe-17534-step-0-12" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Bake bread for 20 minutes. Brush with egg white glaze and sprinkle with a topping if using.
