<h3>Family Dinner You&#8217;ll Love</h3>
<p>This dinner is definitely in the top-1o list of comfort foods. It&#8217;s a perfect meal for back-to-school as well!</p>
<p>This chopped steak is quite similar to salisbury steak&#8211;and some may say it is. However, it parts company with that famous recipe in the way that this is made, especially the gravy. And that takes full advantage of the technique for cooking mushrooms.</p>
<p>I learned that method of cooking years ago while watching a TV shopping channel. <a href="https://www.chefjamie.com/" target="_blank" rel="noopener noreferrer nofollow external" data-wpel-link="external">Chef Jamie Gwen</a> was demonstrating some of her cookware and was making mushrooms in one of the skillets. The secret? It&#8217;s simple. You sear them in the highest temperature in the hottest the pan can get.</p>

<h3>The Cooking Method</h3>
<p>These patties are first browned on one side then flipped but not browned on the other side. You place the whole pan in the oven and they finish off that way.</p>
<p>It&#8217;s essential to use a skillet that is also oven proof. I tend to use cast iron for this type of cooking because not only is it oven proof, but it cooks so evenly. I use mine for many things, but I avoid using them if there&#8217;s lots of gooey cheese because then it&#8217;s difficult to clean.</p>
<p>These patties then are pan roasted. Here, you don&#8217;t cover the pan so any pan juices should reduce to practically nothing, but if there is any accumulated juice after cooking, then drain it completely because it&#8217;s not used.</p>

<h3>The Simplest Side</h3>
<p>I chose to serve these chopped steak patties with noodles rather than mashed potatoes. That&#8217;s quite a feat for me because I love me some real mashed potatoes and the gravy would be super on top of them. By all means serve with potatoes&#8211;you won&#8217;t be sorry.</p>
<p>However, I&#8217;m glad I went with the noodles. I actually enjoyed them as much as the meat. There&#8217;s no real recipe&#8211;just boil up some wide egg noodles&#8211;about 4 cups. Drain them well then add about 4 tablespoons of butter and stir until the butter is melted. Then for the crowning glory add about 1/4 cup of chopped fresh chives. I highly recommend using fresh chives. They look better and taste better. The dehydrated ones may be OK with sour cream in a potato, but they really won&#8217;t work in this as the flavor is quite different once dried.</p>

Add the ground beef, salt and pepper. Heat a large heavy oven-proof skillet over medium-high heat. Add the drop of olive oil to the pan to coat—I use a paper towel to do this.</div></li><li id="wprm-recipe-14625-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Preheat oven to 350 degrees F.</div></li><li id="wprm-recipe-14625-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Sear the patties until nicely brown on one side. Flip the patties and place the entire pan in the preheated oven. Bake for 15-20 minutes. Remove from oven, place patties on a plate and loosely cover with foil then drain any excess fat and wipe the pan clean with a paper towel.</div></li><li id="wprm-recipe-14625-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">For the gravy, melt the butter in the same pan over medium-high heat. Add the mushrooms and cook until brown and moisture is released and evaporated, about 10 minutes. Stir in the onion and the flour; cook for 2 minutes. Stir in the beef broth and cook until gravy is slightly thickened; about 5 minutes. Stir in the Gravy master if using.</div></li><li id="wprm-recipe-14625-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Pour gravy over steaks and garnish with parsley if you like.</div></li></ul></div></div>

<a name='more'></a>It&#8217;s been a long LONG time since I fed children! However, I never forgot how big a little one&#8217;s appetite can be.</p>
<p>I feel it&#8217;s very important to give kids a high percentage of whole foods in their diets. Snacks present an excellent opportunity to pack in some of those most-needed fruits and veggies. &nbsp;If you have a veggie hater or a picky eater, the best way to disguise a serving of veggies or fruit is to put it in a smoothie. A serving size of spinach added to my recipe below for the strawberry banana smoothie will go unnoticed. &nbsp;Trust me. Kids think the green color is funky anyway, and I&#8217;d suggest calling it a Ninja Turtle Shake!</p>
<p>I figured I&#8217;d take this snack challenge, even though there&#8217;s no younguns in the house. So when I went shopping this past week at my local Price Chopper, I paid close attention to what was on sale in the #PriceChopperBTS specials. &nbsp;Many were in special displays around the store so finding them was pretty easy.</p>

<p>Keeping in mind that I have to like the items because it&#8217;s only me eating them, I chose Honey Nut Cheerios, Yoplait Greek yogurt and some Lunchables. I&#8217;d never tried Lunchables, but decided to give them a try because it&#8217;s the perfect size snack for when you feel peckish mid-afternoon and want something savory instead of sweet. Grownups need an &#8220;after-school snack&#8221; sometimes too!</p>

<p>You can&#8217;t get more convenient than Lunchables. &nbsp;Open the package, and it&#8217;s a mini complete meal. The way they are packaged, they stack nicely in the fridge and the kiddos can help themselves. Same goes for the yogurt, but I&#8217;d like to do something special for a child, especially when they&#8217;re easing into the first couple of weeks back to school.</p>

<p>That&#8217;s where the smoothie comes in. &nbsp;It&#8217;s easy to make, as I said before. Throw it in, zap and go. &nbsp;An older child can even do that themselves. &nbsp;Although I wouldn&#8217;t trust a child younger than around 7 handling razor-sharp blades like my Ninja has.</p>

And what I made to serve along with it is some no-bake cookies packed with the Cheerios! &nbsp;Having had experience feeding boys, he&#8217;ll probably eat the cookies and the Lunchables <b style="font-family: Arial, Helvetica, sans-serif; font-style: italic;">and</b>&nbsp;drink the smoothie (and have room for dinner too&#8211;don&#8217;t worry!!)</p>

<p>This is really tasty and I liked the idea of combining all of my favorite burger joint things in one economical casserole. Unfortunately, when I got a hanker on for this, I was out of regular frozen french fries, but I did have some crispy crowns in the freezer that substituted nicely.  In fact, I think it gave this casserole even more flavor.  Since they are just flattened tater tots in actuality, good ol&#8217; tater tots can be used if you have them on hand.</p>

<p>There is real cheese in this too, so you get a nice bite from the real cheddar cheese as well.  You can substitute real cheese for the Velveeta, but your sauce will separate.  This is why I tend to use Velveeta, even if it&#8217;s just a small chunk, in any cheddar cheese sauce.  It is a miracle that keeps the sauce from separating.  But since we rather LIKE Velveeta, I just go with using only that in this sauce.</p>
<p>Add bacon and some chopped pickle in the mix too if you&#8217;d like.  It only gets better!</p>
