Shrimp Scampi With Linguine

This is extremely easy!  Try with the addition of freshly grated Romano or Parmesan cheese to top.  A splash of dry white wine or dry sherry along with the lemon juice would go very well here too.

I omit the thinly-sliced lemon as I find it a bit too overpowering here and I also add a bit more garlic and crushed red pepper flakes.

Linguine With Shrimp Scampi
2 servings cooked linguine*
1/2 lb peeled & deveined shrimp
2 tbs unsalted butter
2 tbs olive oil
3 large cloves garlic, minced
1 tbs chopped fresh parsley
1/2 tsp lemon zest
2 tbs freshly squeezed lemon juice
1/8 tsp crushed red pepper flakes
freshly ground pepper & sea salt to taste
about 4 very thinly sliced pieces of fresh lemon, cut in wedges
*Cook linguine as per package directions.  No hard & fast amounts here, but a good guide to serve 2 people would be about 4 oz dry.

In a heavy skillet, melt butter with olive oil.  Add garlic and saute for about 1 minute.  Add shrimp & salt and pepper to taste; cook until it turns pink, stirring frequently, about 5 minutes.  Remove from heat and add lemon juice, lemon zest, parsley and crushed red pepper.  Stir well and serve over the cooked pasta.
