Almost burn them–you have to use high heat, keep them moving in the pan and watch them like a hawk. It’s worth it though–the flavor is amazing.

The only change I do is to substitute a couple packages of dry Hollandaise sauce mix from Knorr and make to pkg. directions and skip using the heavy cream. It really does jack up the flavor. I find myself adding more fresh mushrooms just about every time I make it. Also good over wide egg noodles.
