					<description><![CDATA[I do recall someone commenting that this happened Sister Creek, but he used grated parmesan. Did you? Sometimes a brick of asiago can get really hard like parmesan so perhaps that could be a reason.&lt;br /&gt;&lt;br /&gt;Only thing I can say to avoid this (with any cheese) is just to let it melt then thicken with the flour or cornstarch and don&#039;t let it reduce. ]]></description>

					<description><![CDATA[I&#039;ve read through the comments and don&#039;t see others having the problem I had--so clearly it is my technique problem.  When I reduced the sauce the cheese, when had melted, began to coagulate and the longer I stirred the thicker and more unmanagable it became.  We ate it anyway, just was unhappy with the glumly way it looked.  The flavors were great.  We agree it is a great recipe.  I&#039;d just love some help with avoiding the coagulate cheese problem.
