Sausage and Potato Bake
Mom’s Sausage and Potato Bake
A quick and easy one-dish meal that was a favorite of my late mother.  Works well with any sausage, not just Italian!

This is comfort food at it’s best and so tasty too.  Perfect if made in a halogen oven.  Just did it and it takes half the time and the potatoes are oh SO crispy!!!  This is a great little oven.  Inexpensive and highly rated.  The thermostat is in Celsius (because it’s a Euro model) but if you multiply degrees C by 2, then you’ll get roughly our temps in F.

Mom’s Sausage and Potato Bake
  •  8 large Italian sausage links, hot, sweet or specially flavored
  • 4 large potatoes, cut in chunks
  • 3 tbs. chopped onion
  • 2 tbs olive oil 
  • oil to lightly coat pan surface
  • salt & pepper to taste
Mix potato chunks, onion & oil in a bowl.  Lightly oil a 10 or 12-inch skillet.  Place potatoes in skillet, add salt & pepper to taste and arrange sausage over potatoes, making sure some potatoes are not covered with sausage (as in photo) so they brown.
Bake at 375 degrees for about 30-40 min or until sausage are browned and have internal temperature of 170 degrees.
