Creme de Menthe Cake Mix Cookies

Serves: 2 doz
  • 1 box (2-layer size, 15+ oz) white cake mix--I used Duncan Hines
  • 2 eggs
  • ½ cup oil
  • 1-2 tsp green food coloring (optional)
  • ½ cup mint morsels (see NOTES)
  • ½ cup chocolate morsels
  1. Preheat oven to 375 degrees F.
  2. Blend cake mix, eggs, oil and food coloring (if using) in a large bowl.
  3. Fold in the mint & chocolate morsels.
  4. Shape into balls about the size of a walnut and place 2-inches apart on an ungreased cookie sheet.
  5. Bake for 8-10 minutes.
  6. Let the cookies cool for 2 minutes on the baking sheet. Remove to a rack to cool completely.
If you cannot find mint morsels--you can use 1 cup Andes Candies baking bits and omit the chocolate chips, or you can omit the mint morsels, use 1 tsp peppermint extract in the batter and up the amount of chocolate chips to 1 cup.
