Cheddar Corn Casserole

Ingredients
  • 1 can (14 oz) cream style corn
  • 1 can (15 oz) whole kernel corn, drained
  • ¼ cup chopped onion
  • ½ cup chopped bell peppers (assorted colors are nice)
  • ¼ cup melted butter
  • 4 tbs flour
  • 2 tbs sugar
  • ⅔ cup milk
  • 1 cup crushed crackers (like Ritz)
  • 2 cups shredded sharp cheddar cheese
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ¼ tsp. cayenne pepper
Instructions
  1. Preheat oven to 350 degrees F. Lightly grease a 2 quart casserole
  2. Combine all ingredients and pour into prepared pan
  3. Bake for 1 hour.
  4. SLOW COOKER
  5. Spray of grease the crock of a 5-7 quart slow cooker
  6. Mix all ingredients in a large bowl and add to slow cooker
  7. Cook on high 3-5 hours, low 4-6 hours. Times are approximate as all slow cookers cook differently so check for doneness at minimum time.
