Taco Meatloaf

Serves: 4-6
  • 1 lb lean ground beef
  • 13/4 cup saltine or Ritz cracker crumbs
  • ¼ cup milk
  • 2 eggs
  • 1-2 envelope (1.25 oz) taco seasoning (see NOTES)
  • 1 cup salsa/pico de gallo
  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment or aluminum foil.
  2. Mix all ingredients, except for the salsa, in a large bowl.
  3. Shape into a loaf on prepared sheet.
  4. Bake at 350 degrees F for 50-60 minutes, or until center of loaf is 160 degrees F per a meat thermometer.
  5. Top with salsa or pico de gallo (if desired)
You can use 3 tbs of bulk taco seasoning or 1 recipe of my taco seasoning recipe
