Yum Yum Chicken

Serves: 4-6
  • 10 assorted chicken parts (I used thighs and drums)
  • ½ cup kosher salt
  • ½ cup sugar
  • 2 quarts water
  • Yum Yum Sauce:
  • 1 tsp tomato paste
  • 1 tbs melted butter
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • 1 cup mayonnaise
  • 1 tsp sugar
  • ⅛ tsp cayenne pepper
  • ¼ cup water
  1. Mix the water, kosher salt and sugar in a large non-reactive container.
  2. Place chicken in the brine and refrigerate for at least 2 hours but no more than 6 hours.
  3. Mix all yum yum sauce ingredients in a small bowl; set aside.
  4. Preheat your grill to medium-high (about 350℉).
  5. Place chicken on the grill skin side down and cook for 15 minutes, watching so the skin does not burn. Turn skin side up and cook for 15 minutes.
  6. Brush with yum yum sauce and grill each side for an additional 5 minutes.
  7. Serve with additional sauce for dipping.
  8. Make in the oven--Preheat oven to 400℉. Place chicken on a lightly greased baking sheet skin side down. Bake for 15 minutes then turn skin side up and bake for an additional 15 minutes. Proceed as in grill method.
