Ingredients
  • 3 pkgs ramen noodles (save the flavor pack for something else)
  • 2 ribs bok choy sliced thinly-include some leaves too
  • ½ cup thinly sliced red bell pepper
  • 1 cup thinly sliced leftover steak or london broil
  • 10 snow peas
  • 1 clove garlic, finely minced
  • 3 tbs oil
  • Dressing:
  • ½ cup unseasoned rice vinegar
  • ⅓ cup soy sauce
  • a few drops (about 1 tsp) dark sesame oil
  • 1 clove garlic finely minced
  • 1 tbs chili garlic sauce
Instructions
  1. Place all dressing ingredients in a covered container and shake to combine; set aside.
  2. Cook ramen noodles per package directions; drain and rinse.
  3. Heat a large skillet or wok over high heat. Add the oil.
  4. Then add the bok chop, red bell pepper, garlic and snow peas. Stir fry for about 2 minutes.
  5. Place the steak in the wok and stir fry for about 30 seconds until just heated through.
  6. Add the noodles to the wok and toss to combine.
  7. Drizzle with dressing to taste.
