Thank you!!! The fresh potatoes are perfect–I always defrost mine and this saves time. The soup is a stroke of genius too. So many people hate Velveeta and I have many readers abroad who can’t get it because it’s not sold there but cheddar cheese soup is. I will put your wonderful substitution in the post!!!

I just happened to spot fresh shredded potatoes, bagged in the egg section of my local market and used them.
I substituted Cheesy condensed soup undiluted straight out of the can in place of the Velveeta.

Everyone thinks me a genius for a minute, but I printed this recipe to hand out and blew my cover
Wish I could post a pic or two.
