Linda’s Double Chocolate Orange Cookies |
This is an original, created right in Linda L’s own kitchen.
She’s whipped up a season’s winner here combining a chewy, brownie-like cookie with the new orange variety of M&M’s candy.
See more on her blog, The Lemontree,
where there’s lots more to come besides baking. Linda is an expert
quilter, crafter and talented party and wedding planner. I hope soon to
see pics of her middle daughter’s wedding on her blog, where she
absolutely outdid herself, creating all the children’s costumes, floral
arrangements and favors–all with the popular peacock theme.
Double Chocolate Orange Cookies
- 8 ounces semisweet chocolate chips
4 tbsp unsalted butter
2/3 cup all purpose flour
1/2 tsp baking powder
1/2 tsp salt
2 large eggs
3/4 cup packed light brown sugar
3/4 tsp pure vanilla flavoring
1/2 tsp orange extract
4 ounces semi sweet chocolate chunks
3/4 cup orange flavored M&M’s
Preheat oven to 350 degrees
Heat
the semi sweet chocolate chips and butter in a microwave safe bowl in
20 second increments, stirring between each until almost melted – do not
overheat or it will burn. When it is almost all melted take it out and
stir till all of it is melted in.
In small bowl mix together flour, baking powder and salt.
In
a large mixing bowl, beat eggs, brown sugar, vanilla and orange extract
until light and fluffy. Reduce speed to low and beat in melted
chocolate. Mix in flour mixture until just combined. Stir in chocolate
chunks and M&M’s.
Drop
by tablespoonfuls 2 inches apart onto ungreased baking sheets. Bake
for 12-15 minutes until cookies are shiny and crackly, but soft in the
center. Cool on baking sheets for 10 minutes, then transfer to wire
racks and cool completely.
About 2 dozen cookies.
